Building something from scratch is tough, no shit. But my cofounder @chefkatiecarey said the other day that it’s like bush-whacking through a thick forest: There are scrapes and bruises and paths that lead to nowhere. But eventually, eventually, you find a clearing. And then you repeat it over and over again. Every clearing, a small victory and ready for a new challenge.

@brooklynsupper combined chimi with olives. Our suggestion? Roast cauliflower tossed with evo and salt for 15 minutes on 375. Then take it out, toss with chimi and roast for another 5-10. It keeps the chimi bright. Then add olives, maybe toasted breadcrumbs and if you want a swipe of lemon zest.
